Recently I have been intermittent fasting meaning that I am eating all my food within an 8 hour window between 12pm – 8pm. Although I have been loving this so far, I do find that by 12pm I am usually out and about and started my day, therefore more often than not I am not at home and unable to cook something up right away.
To avoid spending a fortune buying food whilst I’m out, and usually something convenient and unhealthy, I have come up with the perfect snack for on the go.
I have seen these around before but never thought much of them, until one day when all I had in the fridge was a few leftover spring onions, some cheese and eggs, I decided to whisk them all up together and the outcome was delicious.
The great thing about this recipe is it’s so easy to adapt, you can just chuck in anything you have leftover in the fridge; tomato and basil, bacon and mushroom or spring onion and cheese! Whatever you fancy – it’s so easy and super adaptable.
What you will need: (makes 6)
- 3 x Eggs whisked
- Handful of grated cheese (can be any cheese, Parmesan, Cheddar, Feta)
- 3 x Cooked and diced rashers of bacon
- 1 1/2 x Sliced spring onion
- 1 x Muffin tray
These ingredients are based on my favourite flavour combination of bacon and spring onion but feel free to swap out any of the ingredients.
There is no real method to this, simply chuck all the ingredients into the bowl of whisked egg, season with lots of salt and pepper – add some chopped chilli if you want an extra kick. Then grease your muffin tray, I used a spray of Fry Light in each case but you can always grease with butter or oil if you don’t have this.
Once you’re muffin tray is greased, switch your oven onto 180 degrees, fill each muffin case up half way with your egg mixture and pop them in the oven for 13 – 15 minutes or until cooked through. You don’t want undercooked egg, so ensure when you stick a knife in it comes out clean.
Once cooked, allow muffins to cool. Using a spatula remove egg cups from the tray and voila! The perfect on the go healthy snack.
