Top 3 Easter Bakes

With Easter just round the corner (literally! Bad blogger with the last minute post!) – I thought what better way than to get messy in the kitchen and bake up some treats for the family.

These 3 quick and easy bakes are some of my favourite comfort eats, especially around Easter time when all you want to do is indulge in all things chocolatey!

Now I have to admit, I am no baker! Yes I enjoy baking and definitely enjoy the eating part, but I am no means a good baker.

My first bake is one I make all the time and am always on the hunt for the best recipe – banana bread. What’s not to love? Okay if you don’t like bananas this may not be for you but if you do it’s the perfect afternoon snack with a cup of tea and this chocolate recipe is perfect for the Easter period.

This is Lucy Watson’s Vegan Banana & Chocolate Bread – unfortunately my bananas look on the sad side here, but any pro baker will know the secret to a good banana bread is an overripe banana (pro baker – that’s me!)

I found this recipe in Lucy’s Feed Me Vegan Cookbook which is perfect if you are interested in trying out some basic and easy vegan recipe’s – it’s not an over fancy pretentious cook book, but wholesome, good food! I highly recommend – and for £4.99 you can’t go wrong.

Next up, another essential at Easter – the hot cross bun bread & butter pudding! Oh wow! If you are yet to experience this I highly recommend you get yourself down the shop, purchase some hot cross buns and get baking – this is possibly one of my all time favourites.

This has to be one of the easiest yet most delicious puddings I have made. Vegans – look away! This sweet and delicious hot cross bun pudding has put the ultimate twist on a classic, and I am not complaining.

I used this very simple recipe that came through on one of those Sainsbury’s magazines – make yourself a custard, slice your buns, soak and your ready to go! It could not get any easier.

And finally, what’s Easter without a chocolate nest! You can’t go wrong. This really could not get any easier and is an all round crowd pleaser. If you’ve got too many chocolate eggs left over from Easter, buy yourself some shredded wheat and you are ready to go.

Enjoy your bank holiday weekend, eat too much chocolate & spend time with your family. For the first time ever I am not working and will be indulging to the max. Until next time, M x
